Ingredients

  • 700 g Aussie beef shank

  • 500 g Oysters

  • 200 g Enoki mushrooms

  • 100 g Okra

  • 50 g Onions

  • 10 g Cheese

  • 2 Eggs

  • 1 tsp Cornstarch

  • Garlic, shallots

  • Green chilli sauce

  • Chillies or chilli powder

  • Sesame oil

  • Cashew nut oil

  • Ketchup sauce

  • Tamarind fruits

  • Sweet and sour sauce

  • Chilli sauce

  • Salt

  • Pepper

  • Sugar

  • Seasoning seeds

  • Butter

  • Oyster sauce

Method

To prepare the meat:

  1. Retain the fat layer covering the meat as it helps to improve the taste and minimises the dryness and hardness of the beef meat.

  2. Wash the beef and dry it using absorbent paper.

  3. Cut the beef into bite-sized pieces and place it on a plate. Mix in some sesame oil.

To prepare the oyster:

  1. Remove the oyster shell and take out the oyster meat.

  2. Soak the oyster meat with salt and rinse with water to disinfect. Repeat this 2 - 3 times.

  3. Drain the oyster meat, then marinate them with 2 tsp of sesame oil.

Preparing the remaining ingredients:

  1. Cut off the roots of enoki mushrooms and soak them in salt for 5 minutes. Wash with water afterwards.

  2. Wash the okra with salt water, remove and cut into bite-sized pieces.

  3. Thinly slice the onion and soak it in salt water to reduce the smell.

  4. Wash and cut chillies into thin strips. Peel and chop shallots and garlic.

  5. Add green chilli sauce to a bowl to use as a dipping sauce.

To cook the sauce:

  1. Set the pan on the stove and add 2 tbsp cashew nut oil, chopped garlic and onions.

  2. Add 200 ml of water and ripe tamarind fruits. Mix well. When the mixture begins to thicken, turn off the stove and take the tamarind seed off.

  3. Add 2 tbsp of ketchup, 2 tbsp of chilli sauce, 3 tbsp of sweet and sour sauce, 1 tsp of cornstarch, 1 tsp of chilli powder and 1 tsp of pepper.

  4. Stir the mixture until smooth for 2 minutes.

To cook:

  1. Place another pan on the stove and add 1 tbsp of butter to it.

  2. Add onion, enoki mushrooms, Aussie beef shank & oyster to the pan.

  3. Add more butter, eggs and some of the sauce prepared earlier into the pan.

  4. Add in the cheese and chillies.

  5. When the mixture is boiled, add the remaining sauce to the pan and add the meat and remaining ingredients. Cook until the meat is done or medium-rare to ensure that the meat's quality is preserved, then turn off the stove.

  6. Serve the dish with bread, chilli sauce, ketchup, salt and pepper on the side.
