Ingredients

  • 200 g Australian chilled beef

  • 5 g Tabasco

  • 9 g Lemon juice

  • 8 g Worcestershire

  • 25 g Dijon mustard

  • 5 g Mustard seed Maille

  • 15 g Olive oil

  • 15 g Mustard seed

  • 3 g Salt

Method

  1. Australian chilled beef: 200 g (any cuts). Trim the meat so that all the fat and tendons are gone, leaving only the meat, and cut into small cubes. Always keep the meat separate and cold from the beginning of preparation until cooking.

  2. Making the sauce:

    • Roast 15 g of mustard seeds until golden and fragrant, Add in 10 g, leaving the remaining 5 g for decoration.

    • Mix the spice mixture: tabasco, lemon juice (the more yellow the better), Worcestershire sauce, Dijon mustard, mustard seed Maille, olive oil, 10 g crushed mustard seeds and salt; mix the mixture well.

  3. Put the prepared beef in a clean bowl, then add the sauce and mix well.

  4. Plating the beef tartare: Using a round mold, add and compress the beef mixture. For garnish, sprinkle the remaining 5 g of roasted mustard seeds and add coriander leaves.
