Braised Beef With Coconut Milk Infused With Kurma Spice and Roots Vegetables

Ingredients

  • 500 g Chilled Halal Australian Beef, Cubes

  • 300 ml Coconut milk

  • 4 g Cinnamon stick

  • 2 g Star anise

  • 2 g Clove spice

  • 4 g Cardamon spice

  • 25 g Kurma powder

  • 10 g Turmeric powder

  • 30 g Shallots, sliced

  • 10 g Garlic, sliced

  • 10 g Ginger, sliced

  • 1 tsp Salt

  • 1 tsp Sugar

  • 50 g Potato, large cubes

  • 50 g Carrot, large cubes

  • 100 ml of Cooking oil

To blend

  • 80 g Shallots

  • 30 g Garlic

  • 30 g Ginger

  • 30 g Green Chilli

  • 20 g Corriander leaves

Garnish

  • 30 g Tomato Cubes

  • 5 g Large Red Chilli, sliced

  • 5 g Large Green Chilli, sliced

Method

  1. Pre-heat the wok with cooking oil over medium heat and add shallot, garlic, ginger, cinnamon stick, star anise seed, clove and cardamon spice. Saute the blended items together with the kurma and turmeric powder.

  2. Add the beef cubes and saute together with the blended herbs and spices. Add coconut milk, potato and carrot and simmer for 30 minutes until the beef is cooked and tender.

  3. Season with salt and sugar and garnish with tomato, red and green chili for garnish. Serve with steamed fragrant rice.
