Meet Chef Phong Nguyen 

Chef Phong Nguyen is from 2024 the Head Chef of THE BRIX, former Head Chef for QUINCE Saigon. Raised in France and born into an Asian family that loves cooking traditional and tasty food, Chef Phong's expertise varies from classic French cuisine to flavorful traditional Asian dishes. Employing French techniques and premium ingredients with Asian flavors, he developed a passion for cooking by watching, helping, and learning alongside his mother.
Building upon his training and honing his craft, Chef Phong has worked in the North of France with renowned Chef Alexandre Gauthier and William Elliot at their rotisserie restaurant, as well as at one of the first industrial restaurants in the South of France - La Factory Montpellier.

He joined QUINCE Saigon as Head Chef in 2019, alongside acclaimed Executive Chef Julien Perraudin. He has consecutively won Vietnam's Best Restaurant and Bar Awards in 2020 and 2021, and has been delighting international foodies with his aromatic, fine dining quality Mediterranean and fusion dishes through constant seasonal-changing menus.

Chargrilled lamb chops paired with a vibrant Asian chimichurri of BBQ garlic chives, baby coriander, and shiso. Finished with bursts of sweet cherry tomatoes for a fresh, herbaceous twist on a bold classic.
