Consisting of four separate fire-cooking sections, and a meat ageing room for a variety of products including beef, duck and house-made cold cuts. There is no cooking method that can recreate the depth and richness of flavor of a dry aged piece of meat. Max Wiersma - Stoker Executive ChefHailing from North England and Wales, Max brings 23+ years of culinary expertise from renowned restaurants and 5-star hotels across the UK. For the past 7 years, he's honed his craft in Vietnam, including District 3's N21 and as the owner-founder of Thao Dien's Bay Bistro. Chef Max has a penchant for working with the finest ingredients bringing out their natural flavors with thoughtful technique, creating menus that showcase the season's best offerings and reinterpreting classic dishes with a modern twist.
