Discover how to make Vietnamese Beef and Potato Stir Fry, a quick and flavorful dish with crispy potatoes, tender beef, and savoury sauces. Perfect for a hearty family meal.

Ingredients

  • ¼ cup canola oil

  • 2 lbs small Yukon potatoes (sliced into 1/4” thick rounds)

  • 1 lb of sliced beef (tenderloin, sirloin, top round or any other beef cut)

  • 1 tbsp cornstarch

  • 1 tbsp soy sauce

  • ¼ tsp onion powder

  • ¼ tsp garlic powder

  • 2 tsp crushed black pepper

  • 3–4 cloves garlic (chopped, minced)

  • 1 tsp salt

  • 1 tsp fish sauce (optional)

  • 1 tbsp oyster sauce

Method

  1. Peel and slice potatoes, then soak in salted ice water.

  2. Slice beef and marinate with soy sauce, cornstarch, oil, garlic, onion powder, garlic powder, and black pepper. Cover and chill for 30 minutes.

  3. Drain and pat dry the potatoes.

  4. Heat oil in a skillet. Fry potato slices until golden and crispy. Drain on paper towels and set aside.

  5. In another pan, heat a little oil. Stir-fry beef, then add onion, oyster sauce, and fish sauce (optional). Season to taste.

  6. Add fried potatoes, toss gently, and serve hot.

  7. Garnish with cilantro and scallions.
