Beef with Fried Garlic

Crispy garlic meets tender beef in this simple aromatic stir-fry.

Ingredients

  • Knuckle beef: 600g

  • 1 onion (cut into wedges)

  • 15–20 garlic cloves (peeled)

  • 2–3 green peppercorn stems

  • 4 bird’s eye chillies

  • Seasonings: seasoning granules, pepper, sugar, oyster sauce, soy sauce, chilli sauce

  • Cornstarch, cooking oil, butter, water

Method

  1. Prepare & Marinate the Beef:

    • Cut the beef into bite-sized cubes.

    • Marinate with 1 tbsp seasoning granules, 2 tbsp oyster sauce, 1 tsp pepper, 2 tbsp cooking oil.

    • Mix well, add 2 tbsp cornstarch, and let sit for 15 minutes.

  2. Prepare the Sauce:

    • 2.5 tbsp soy sauce

    • 3.5 tbsp chili sauce

    • 1 tbsp seasoning granules

    • 2 tbsp sugar

    • 1 tsp pepper

    • 3 tbsp water

  3. Cooking:

    • Fry garlic until golden and fragrant, then remove.

    • Using the same oil, stir-fry beef for 10–15 seconds.

    • Add butter to the pan, then garlic and green peppercorns, stir-fry until aromatic. Pour in the sauce mixture and cook for 10 seconds.

    • Add onion and beef, stir quickly over high heat for 15 seconds.

    • Finally, add the fried garlic and chillies, stir for another 10–15 seconds, then remove from the heat.
