Meet the Man Behind the Menu

Chef Stijn opened his first market bistro in the south of France before moving to Vietnam to establish Lupin. His culinary style is rooted in French bistronomy – hearty, refined, and unpretentious – where each ingredient is allowed to shine.

Dish #1 - Souris d’Agneau Confite

A tender lamb shank slow-cooked for hours until fall-off-the-bone perfection. Infused with rosemary and garlic, it’s served on a bed of creamy mash and seasonal vegetables, finished with a rich, savoury glaze.

Dish #2 - Selle d’agneau rôtie

An elegant roulade of lamb saddle, roasted and stuffed with herbs. Paired with Provençal ratatouille and a bold black olive tapenade, this dish offers a refined balance of textures and Mediterranean flavours.
