AMA Workshop Series: Driving Innovation Across Vietnam's Retail, Foodservice, And Catering Channels

Meat & Livestock Australia (MLA) Brings Australian Red Meat Expertise to Vietnam Through Aussie Meat Academy Workshop Series.

Meat & Livestock Australia (MLA) has successfully wrapped up its intensive Aussie Meat Academy (AMA) workshop series, held from June 2nd to 4th. The event provided Vietnamese partners with deep insights into the Australian red meat supply, the Australian Grading System, and the premium nutritional benefits of Aussie beef and lamb. It also served as a strategic preview and launchpad for the upcoming "Football & Nutrition" campaign, set to roll out this July and August.

The series was tailored for three distinct market segments, addressing practical operational and culinary challenges:

  • Retail Workshop - Ready-to-Cook Product Development: Focused on the convenience trend, showcasing innovative solutions to develop pre-prepared Aussie beef and lamb products, such as skewers and quick stir-fries, optimising commercial value for the retail sector.
  • Foodservice Workshop - Game Night Meals Menu Development: Capitalising on the upcoming sports season, this session shared creative menu concepts and sharing platters perfect for football viewings and social gatherings.
  • Caterer Workshop - Nutrition & Cost-Balanced Menu Consultation: Addressed cost-optimisation for central kitchens, catering services, and large-scale meal providers by introducing smart primal cuts of Aussie beef and lamb, integrated with comprehensive nutritional consultations.

  

The workshops were led by Greg Davis, an Australian Red Meat Technical Specialist and Master Butcher with over 40 years of experience in processing, grading, technical training, and supply chain development across the Asia-Pacific region. His expertise delivered precise butchery demonstrations and high-yield raw material solutions.

The event was enriched by MLA’s red meat ambassadors in Vietnam: Aussie Beef Mates Khai Vu - Lan Vo and Lambassadors Thinh Tran - Phan Anh. Leveraging the inherently premium quality and natural flavor of Australian beef and lamb, the ambassadors focused on delivering diverse, highly applicable culinary concepts. By skillfully infusing local ingredients and Vietnamese spices, they beautifully localised and integrated the native spirit into highly popular dishes on Vietnamese dining tables, such as skewers and quick stir-fries:

  • ABM Khai Vu: Brought creative familiarity to everyday meals with Vietnamese Northwest Herb Beef Skewers, Prime Signature Beef Saute, and Aussie Beef Tacos.
  • ABM Lan Vo: Added a localised twist to popular dishes with Wild Pepper Glaze Beef Skewers and Tropical Chili Relish Beef Saute.
  • Lambo Thinh Tran: Harmoniously blended premium Aussie lamb into traditional Vietnamese flavors with Herb-marinated Lamb Skewers, Peanut Satay Lamb Saute, and Lamb Patties with Mac Mat Leaves and Vietnamese Herb Dressing.
  • Lambo Phan Anh: Showcased distinct regional identities through innovative adaptations like Cham Cheo Herb Dressing Lamb Skewers and Tamarind & Garlic Glaze Lamb Saute.
