Aromatic Dried Australian Beef

Aromatic Australian beef marinated in chilies, lemongrass, and spices, then dried to perfection. Serve baked or fried for a flavourful and satisfying meal.

Ingredients

  • 1 kg Australian beef

  • 5 stalks Lemongrass

  • 5 chillies

  • 7 g Ground black pepper

  • 13 g Sugar

  • 13 g Salt

Method

  1. Remove the fat and gristle from the beef and cut into 2-3 cm thick slices.

  2. Finely chop the chillies and lemongrass (do not chop too finely).

  3. Marinate the beef with the chopped chillies and lemongrass, along with 7 g of ground black pepper, 13 g of sugar, and 13 g of salt. Mix well and let the beef marinate for at least 1-2 hours.

  4. Place the beef on a tray or hang it in the sun to dry for about 8 hours to make it crispier and more fragrant.

  5. After drying, it can be used immediately by placing it in an oven at 180 degrees for 15-20 minutes or by frying in a pan without oil.

  6. Keep the remaining unused beef in the refrigerator.
