A vibrant explosion of flavours combining juicy, high-heat sautéed beef with the crunch of green mango and starfruit, all tied together by a bold, chilli-lime Thai dressing.

Ingredients

Main parts:

  • 500 g pork loin

  • 1 mango, a few young starfruit or green papaya

  • Aromatic herbs of choice (in the video, mint and sawtooth coriander are used), red onion, chilli peppers, and a few kumquats

Sauce ingredients:

  • 6-7 tbsp fish sauce

  • 3.5 tbsp sugar

  • 1 tbsp Korean chilli powder (adjust to taste)

  • 2 tbsp chilli paste

Served with:

  • Shrimp crackers

Method

Step 1: Prepare the ingredients

  1. Slice the beef thinly or leave it whole as shown in the video.

  2. Season lightly with pepper and salt (you can add oyster sauce and seasoning powder according to your preference).

  3. Slice the mango and star fruit into bite-sized pieces, soak them in ice water for about 10 minutes, then drain.

Step 2: Cooking the sauce

  1. Sauté the garlic until fragrant, then add the prepared sauce.

  2. Cook until the mixture thickens, turn off the heat, and add a little lime juice (using 2 limes in the video).

Step 3: Cook the beef

  1. Pan-fry or sauté the beef with garlic over high heat.

Step 4: Mix the ingredients

  1. Add mango, star fruit, and red onion to a bowl, add some of the sauce and mix well.

  2. Continue by adding the herbs, chilli peppers, and thinly sliced beef to the bowl, add more sauce and mix until the mixture is well coated.

  3. Arrange on a plate, add fried onions and fried garlic to enhance the flavour.
