Learn how to make Thai-style Beef Salad (Yum Nua) at home with simple ingredients and easy steps. This flavorful salad combines juicy grilled beef, crisp vegetables, fresh herbs, and a zesty dressing made with lime, fish sauce, and toasted rice powder for the perfect balance of savoury, spicy, and tangy flavours.
500g beef (flank steak)
Fresh herbs of choice (the video uses cilantro, mint, and sawtooth coriander)
Mixed salad greens
Cherry tomatoes
Cucumber
Shallots
Bird’s eye chilli
Chilli flakes
Red chilli
1 tbsp lime juice
Glutinous rice
1.5 tbsp minced garlic
Seasoning
3 tbsp fish sauce
1 tbsp tamarind juice
¾ piece of palm sugar
1.5 tbsp oyster sauce
Soy sauce
2.5 tbsp dark brown sugar
2 tbsp rice powder
Marinate the beef and mix 500g of beef with 1.5 tbsp oyster sauce, 1.5 tbsp soy sauce, 1 tbsp fish sauce, 2.5 tbsp dark brown sugar, and 1.5 tbsp minced garlic. Marinate for 1–2 hours or overnight for better flavour.
Make toasted rice powder and toast glutinous rice until golden and fragrant, then pound or blend it into a fine powder.
Prepare the dressing and combine 3 tbsp fish sauce, ¾ piece palm sugar, 1 tbsp tamarind juice, 1 tbsp lime juice, chopped sawtooth coriander, fresh chilli, and chilli flakes. Mix in 2 tbsp toasted rice powder.
Grill the beef and grill over charcoal or pan-sear in a skillet, depending on your available tools.
Assemble the salad and in a bowl, mix cherry tomatoes, cucumber, and shallots (soaked in ice water to reduce sharpness) with some dressing. Add the grilled beef, remaining dressing, and herbs, then toss again with 2 tbsp toasted rice powder.
To serve and layer the mixed greens on a plate, place the beef salad on top, and garnish with red chilli and a sprinkle of toasted rice powder.
